Mr. Wafer is an ordained minister who has been in the food service industry for over 35 years.  To his credit, he has developed and instrumented over 80 creole sauces, spices and seasonings.  Mr. Wafer's experience serving a  large number of people began when he was operations manager at Lackland Air Force Base in San Antonio, TX.  He and his staff served over 58,000 soldier three meals a day.  He was in charge of food prep, food safety and the freshness of daily meals.   Mr. Wafer fully understands the task at hand when it comes to preparing and serving thousands of men and women at a single sitting.  Otis has provided similar caters for Entergy, Chevron, Mobil Oil and Jefferson Parish School System.

He currently serves as Chaplin for Jefferson and Orleans Parish prisons.  After 30 years working in the New Orleans area, Mr. Wafer has been recognized as a leader in his ministry field and the culinary industry.  His skills as an accomplished chef lends credibility to our management team.
