ESC is passionate about food safety and feels that this begins and ends with training. Al chefs undergo a vigorous training internship before the are allowed to run a kitchen on their own. The program includes an intense two-day session learning and understanding Reinhart's inventory control and ordering software program, Menu Matrix.
After that they spend the remainder of the two weeks, working alongside a supervisory chef, where they cook, prepare food, work with the Menu Matrix program and learn to complete all paperwork. They receive hand-on instruction in kitchen management, nutrition and meal planning. Only upon a successful internship with the supervisory chef, will the newly minted ESC chef be allowed to work on his/her own.
